Firehouse Focaccia

Crispy, olive-oil-drenched focaccia that feeds the whole crew. Impossible to mess up.

Ingredients

  • 1500 g Bread flour
  • 2400 g Water(warm)
  • 360 ml Olive oil(plus more for the pan)
  • 4100 g Sourdough starter or yeast(or 7g instant yeast)
  • 510 g Salt
  • 61 tsp Flaky salt(for topping)
  • 72 tbsp Rosemary(fresh, chopped)

Instructions

    Mix flour, water, starter/yeast, olive oil, and salt in a large bowl.

    Cover and let rise 1-2 hours until doubled.

    Pour generous olive oil into a sheet pan. Transfer dough, stretch to fill pan.

    Dimple with oiled fingers. Top with rosemary and flaky salt.

    Let proof 30 minutes while oven preheats to 425°F.

    Bake 22-25 minutes until golden and crispy on the edges.
