Ingredients
- 1500 g Bread flour
- 2350 g Water
- 3100 g Sourdough starter(active, recently fed)
- 410 g Salt
Instructions

Mix flour and water, let rest 30 minutes (autolyse).

Add starter and salt. Fold until incorporated.

Bulk ferment 4-6 hours at room temp, doing stretch and folds every 30 min for the first 2 hours.

Shape into a round, place in floured banneton seam-side up.

Cold retard in fridge overnight (8-12 hours).

Preheat Dutch oven at 500°F for 45 minutes.

Score the loaf, bake covered 20 min at 500°F, then uncovered 25 min at 450°F.

Cool on wire rack at least 1 hour before slicing.

Start the dough before your shift. The cold retard means you can bake it the next day. If the bell rings during baking, the Dutch oven retains heat — you have about 10 min of grace.
