Star Bread

Four thin rounds of soft yeasted dough, brushed with butter and cinnamon sugar, stacked, cut into sixteen and twisted into a star. Egg-washed, baked golden, dusted with confectioners' sugar. One batch makes one 12-inch star — or two little ones.

Instructions

  1. In the bowl of your stand mixer add warm milk, yeast and sugar; let stand 5 minutes. Add the melted butter and egg; beat until incorporated. Add flour and salt. Mix on low and increase to medium with your dough hook. Mix 8 to 10 minutes — you may or may not need to add flour. The dough should pull away from the bowl, sides nice and clean. Remove. Oil a bowl, toss the dough in it, cover with plastic — until doubled in size, maybe 1 hour. Make your filling at this point: in a small bowl whisk the cinnamon and sugar together.

  2. Punch the dough down and turn out onto a lightly flour-dusted surface. Divide the dough into 4 equal pieces and shape into balls. Roll one ball into a thin 12" round. Place it on a sheet pan lined with parchment. Lightly brush with melted butter, leaving ½" bare around the edge, and sprinkle with cinnamon sugar. Roll another ball to the same size and place it on top. Repeat with the remaining balls — you should end up with 4 layers.

    Pro tip — If a ball shrinks back as you roll, let it rest a few minutes and try again.

  3. Place a 3" round cookie cutter in the center of your round. With a sharp knife cut the circle into quarters, starting at the edge and stopping at the cookie cutter. Cut each quarter in half, and once more. You should end up with 16 strips connected at the center under the cutter.

  4. Grab two strips, one in each hand, and twist them 3 times away from each other. Lay them down and pinch the ends together. Repeat all the way round — 8 twisted points. Remove the cookie cutter from the center.

  5. Cover loosely with plastic; let rest 20 to 30 minutes.

  6. Preheat the oven to 375°F.

  7. Make the egg wash: whisk the egg and water until well combined. If the tips of the points have separated, pinch them together. Brush with egg wash. Bake 25 minutes, or until golden brown.

    Pro tip — Cover with foil after 15 minutes if it's browning too fast.

  8. Let cool slightly, then lightly dust with confectioners' sugar.
